Happy Independent Bookstore Day to all who celebrate! I saw some baby animals this week and I must have said, “You are so cute” 300 times. It seems like the most exciting thing I shared last week was that I ate a strawberry-arugula salad. I got lots of requests for the recipe and as you can imagine it is the simplest thing. Mix baby arugula with sliced strawberries and a little Italian dressing (or olive oil and lemon juice, salt and pepper). That’s it! A little magic happens when the peppery arugula combines with the sweetness of the berries. You could add nuts or a protein to this too.
